Curatorial Commentary
The 2,000 guests at the Dallas Trade Mart were served a menu which consisted of: Fresh Fruit Cup, Top Sirloin Club Steak (eight ounces), Tossed Green Salad, French-Cut Green Beans Almondine, Rolls and Butter, Apple Pie, and Coffee.  It is worth noting that the menu for the planned banquet in Austin that evening was identical to the Trade Mart luncheon - with the exception of one item.  The $100-per-plate dinner in Austin added a baked potato. Wick Fowler of The Dallas Morning News wrote that morning, "Must be baked in gold foil." - Stephen Fagin, Curator
